This recipe was sent to us by the children (and staff) of Brimrod Nursery School, Rochdale, Lancs.

Orange and Raisin Cookies

150g plain flour
100g caster sugar
100g butter (softened)
l egg, beaten
2.5ml ( tsp) baking powder
tsp salt
tsp vanilla essence
100g seedless raisins
15ml (1 tbl) grated orange rind

Preheat oven to 190C/375F/Mark 5
Grease 3 baking sheets
  1. Put everything except raisins and orange rind into a large bowl and beat lightly with a wooden spoon.
  2. Stir in raisins and rind.
  3. Put dessertspoons of the mixture about 5cm apart on baking sheets.
  4. Bake for 15mins until golden brown.
  5. Cool on rack & EAT
